How to find a professional restorer?

I am looing for a high-quality professional restorer to restore a model 1889. Can you recommend somebody?

I am hunting for a gun that is a good candidate for restoration. What are the key things that I should be looking for in a restorable gun? Thanks!

It depends on how much you want to spend. If money is no object, then send it to Turnbulls, as they are probably the best, but very spendy.
If you want to save money, but still get a beautiful job, send it to Dale Woody at Gun Fancy. I've had him do a couple, after I did the metal work, and his work is superb! He can recut all the rollstamps, to make them look good, and do all the case colors and rust bluing, plus stock work.
